Guide MICHELIN Italia 2026: two stars
Glam is in the Palazzo Venart, a luxury hotel in the sestiere of Santa Croce. Enrico Bartolini is responsible for the concept, while the kitchen is run by Donato Ascani, who helped earn the restaurant’s two stars. The dining room is intimate, with wallpaper inspired by the Silk Road. The palazzo has two gardens, one of them right on the Grand Canal with a view of the Palazzo Vendramin Calergi.
Ascani works with fish and seafood from the lagoon, wild herbs, and vegetables and young shoots from islands such as Sant’Erasmo and from Cavallino. The grill plays a special role, underlining the produce without masking it. There are two tasting menus, ‘Arte, Orti e Laguna’ and ‘I Classici del Glam’, as well as an à la carte selection. The restaurant suits a special evening in Venice.
Good to know: Closed on Monday and Tuesday. Book by phone, by email or online via the website.
Lagoon, plain and foothills: in Venice fish and seafood dominate, often with spices dating from the days of the trade with the East, while on the mainland it is rice, polenta and radicchio. Typical are cicchetti, small bites served with a glass of wine in the bacari, the Venetian wine bars.
Typical wines: Amarone della Valpolicella DOCG, Conegliano Valdobbiadene Prosecco Superiore DOCG, Soave Classico DOC
