Enoteca Pinchiorri
The house of Giorgio Pinchiorri and Annie Féolde since 1972: three stars, a 17th-century palazzo and an exceptional cellar.

Gaetano Trovato’s two-star restaurant in the Val d’Elsa: Tuscan produce, creative cooking and a new glass building looking out over Colle.
Guide MICHELIN Italia 2026: two stars
The brothers Gaetano and Giovanni Trovato opened Arnolfo in 1982 in Colle di Val d’Elsa, the town between Florence and Siena that was home to the sculptor and architect Arnolfo di Cambio. Gaetano cooks, Giovanni runs the dining room and the wine service. In 2022, for its 40th anniversary, the restaurant moved from the old town into a purpose-built glass and iron building on the hill opposite; the open kitchen lies behind a wall of yellow Siena marble.
Trovato works with what Tuscany provides: Chianina beef, chicken from the Valdarno, duck, plus home-made bread and ice cream, which the Guide MICHELIN singles out. Several tasting menus are offered, one of them vegetarian; the dishes are also available à la carte. The cellar holds around 7,000 bottles, focused on Italy and France. In 2024 Trovato received the Michelin Chef Mentor Award. If you would rather not drive after dinner, you can stay the night.
Good to know: Closed on Tuesday and Wednesday. The ‘Gourmet Discovery’ menu is available only at lunchtime and on Sunday evenings; guest rooms on site.
A cuisine of simplicity and produce: unsalted bread, beans, olive oil, meat from the charcoal grill and game in autumn. Many classics come from cucina povera, the cooking of ordinary people, and today stand alongside great red wines made from Sangiovese.
Typical wines: Brunello di Montalcino DOCG, Chianti Classico DOCG, Vino Nobile di Montepulciano DOCG
