La Pergola
Rome’s only three-star restaurant: Heinz Beck has cooked on Monte Mario since 1994, with a terrace and views over the city.

A Roman family trattoria since 1961, a few steps from the Pantheon: classics, quinto quarto and a wine list of native grape varieties.
In 1961 Armando Gargioli took over an older establishment on Salita de’ Crescenzi, a lane right next to the Pantheon, and turned it into a ‘bottiglieria con cucina’, a wine shop with a kitchen. Today the third generation of the family runs the restaurant: Claudio Gargioli is in the kitchen, and his daughter Fabiana looks after the service and the wine list as sommelier. The Guide MICHELIN includes Armando in its selection of Rome’s best trattorias, with the note ‘Vale l’attesa’ (worth the wait).
The menu sticks to the dishes of Rome and Lazio: pasta, meat, fish and the dishes of the quinto quarto, which have long since disappeared from many restaurants in the centre. According to the Guide MICHELIN, the wine list focuses on native Italian grape varieties and producers who work sustainably. Armando is an address for guests who want to experience Rome without any staging, for instance at lunchtime after visiting the Pantheon or on a weekday evening, when the surrounding lanes grow quieter.
Good to know: Bookings online only, via the website. Open Monday to Friday for lunch and dinner, on Saturdays only for lunch, closed on Sundays; Christmas break from 24 December to 4 January.
Roman cooking is direct and robust: guanciale, the cured pork cheek, Pecorino Romano and pepper carry the great pasta dishes, joined by the quinto quarto, the ‘fifth quarter’ of offal and oxtail. Roman Jewish cooking has contributed classics such as fried artichokes.
Typical wines: Frascati Superiore DOCG, Cesanese del Piglio DOCG, Roma DOC
