Guide MICHELIN Italia 2026: three stars; Michelin Chef Mentor Award 2026 for Heinz Beck
La Pergola is on the top floor of the Rome Cavalieri, a Waldorf Astoria hotel on Monte Mario in the north-west of the city. German-born Heinz Beck has been at the stove since 1994. In the 2026 edition of the Guide MICHELIN, La Pergola is the only restaurant in Rome with three stars; at the same time the guide gave Beck the Chef Mentor Award for the many young chefs he has discovered and trained.
The Guide MICHELIN classes the cooking as Mediterranean and contemporary; many dishes are finished at the table. Beck’s fagottelli are famous: small parcels of pasta with liquid carbonara inside, Roman classicism turned inside out. The guide calls the wine list, overseen by head sommelier Marco Reitano, exceptional. The renovated terrace opens up a view over Rome. The restaurant suits a long-planned evening, an anniversary or a business dinner of some importance.
Good to know: Open only for dinner, Tuesday to Saturday; closed on Sunday and Monday. Book by phone or online via the hotel website.
